A millésime must contain 100% of the specified year. The year must be marked on the cork. The millésime champagne matures on the lees for at least 3 years.

Clear, golden yellow with green reflections. Fine bubbles that line up like a string of pearls.
De Castelnau, Millésime, 2000, brut smells of apples and citrus fruits. In contrast delicate roasted aromas and butter.
Intense and complex. Wonderful age notes. Mouthwatering tastes of brioche and pastries. This reflects the maturity of the cuvée. Delicate notes of citrus fruits. Lively finish, with a dominance of apples.
Overall uncomplicated, refreshing with a mineral taste. Hardly any acid.
